Great value if it can hold an edge

Used it for a few days now, so far so good. Will update in a month to 2 on how the edge holds up against my VG10 and HAP40. Factory edge is very sharp, passed paper test with flying colors. Great balance and good grip. $40, it's hard to beat. the core is SKD11 (D2). HRC 60 should be similar to VG10 and should hold an edge for quite sometime.First time using a 9" tall cleaver, not use to it yet but I can slice ginger and beef to paper thin, even and straight. Should have gotten a traditional Chinese Cleaver years ago. Looks intimidating but it's pretty easy to use. I can cut more straight and even compared to my chef or santoku knives. I'm loving it so far, time will tell.

Great for cutting spaghetti squash

If you've ever prepared spaghetti squash, you'll understand how difficult it is to cut in half. This knife made it a lot easier to cut the squash. I appreciate how the knife has a decent weight, the grip feels strong, and the blade is sharp. It arrives nicely packaged and has a sticker indicating that the knife is not suitable for chopping or cutting frozen foods. Overall, it's a great knife, and I'm happy to be able to slice my squash more easily.

Leave it to cleaver

Ok now, this is the cleaver I’ve been waiting for. I think. Yet the blade says no chopping. For cutting only. That’s a little odd but I don’t care because it’s big, the handle is nice, blade is beautiful, and it feels and works great.

Couldn't be happier with this, what a knife

I love knives but can't afford to buy many of my favorites I've handled at shops, shows, and other enthusiasts' collections. I know there's a long a history of knife making in china as anywhere in the world and have been hoping to find a great Chinese brand (not one of the many generic knives produced en-mass for repackaging by all the fly-by-night internet brands you see these days). I don't know if this brand is *really* from the 1600's, but i can tell you this is a gorgeous, very cool design somewhere between a cleaver and a chefs knife in *appearance.* In *practice* this is absolutely a *chefs* knife as the company clearly states — it comes sharp enough to shave arm hair and works wonderfully for prep slicing, cutting, etc. I verified the weight at just over 14oz (7/8 lb or 400g) and naturally it's balanced top heavy. It's been a blast to use so far — the unfamiliar (to me) design is fun to learn to use. Looking forward to checking out their other products and, hopefully, adding more great pieces like this to my collection. Highest recommendation!

Wonderful handle and very nice blade

The ZHANG XIAO QUAN 8' chef knife has a really good handle. It seems like the handle and the blade are 1 piece rather than adding a handle as a separate piece. I really like the fact that the handle will never become wiggly. For me, I always need to replace knives because of the handle issue, so this will never become an issue with this knife. I also love the size and feel of the knife. It is easy to hold and feels secure and comfortable in my hand. It cuts very well and the blade is thick and strong. This knife is really good quality and I am very happy with my purchase.
